For CJK languages, especially Chinese, the default fontset provided by CTeX is fandol, whick is lack of many characters and isn't equipped with GSUB table, leading to missing or errors during rendering.
Google Noto is a project includes most characters on earth and is supported by OverLeaf officially in the previous link. In Chinese, it represents Source Han(Noto CJK). Thus, in most cases, supporting Noto is essential for CJK writers.
