It would be nice if we can isolate notes based on section or folder.
Why
In current version all the notes are shown on the sidebar and I use simplenotes for most of works like, tasks/Rough work (Because app is very fast, clean and syncs across devices). So whenever I present my screen during meetings, I don't have any way to hide other notes.
How
UX: It can be collapsible just like VS code/notion/Obisdion and so on.

If I am understanding what you are looking for, these are things you can do with Simplenote.
Isolating notes by folder:
Simplenote does not have a folder structure at this time, but it does have tags and you can use that to isolate notes. If you start tagging your notes, you can then select a tag from the left side menu and only the notes with that tag will be shown. That way during your meetings you could hide notes that weren't relevant.
Collapsable:
The sidebar for Simplenote is collapsable. If you tap on the hide sidebar button once it the sidebar with tags/trash/etc will hide, if you tap on it again it will hide the notes. Then tap it a third time to bring back both side menus. You can also go into focus mode which hides both menus by going to View > Focus Mode.
