Enable daily backups for the disk holding submissions #219

We wanna make sure we don't lose the submissions. GCP PD (where we currently store them) is RAID equivalent, but let's also keep additional backups just in case.

Definition of done

  • Automatic daily backups are set up for the disk holding the submissions
  • We test being able to restore and access the files
